Bioactive peptides produced by enzymatic hydrolysis of food-derived proteins could be used for various biomedical applications such as antihypertensive drugs. In the depicted study, a highly specific M. xanthus prolyl endopeptidase mutant was rationally designed by constraint/free molecular dynamics simulations and binding energy calculations towards the application in the hydrolysis of food-derived proteins to produce antihypertensive peptides with a proline C-terminus.
